Yummy, Seedy, Sattvic Energy Bites Recipe
Ive had a few different versions of these seedy bites over time and LOVE the ones you find here at our local health food store. They are a little sweet, a little salty with a gentle crunch of seeds! YUMMY! So, I have been trying to recreate them at home for awhile. I think Ive nailed a pretty good version that matches the others! Try it for yourself!
2 TBSP coconut oil, unrefined, room temp so its soft or melted
1/3 c almond butter
1 TBSP maple syrup, to taste
1/4 tsp cinnamon
1 TBSP cacao powder
1/2 tsp vanilla, to taste Dash of sea salt, to taste
** Mix all these ingredients together by hand in a medium bowl
**Add all the following, mixing in gradually
1/2 TBSP chia seeds
1/4 c unsweeted coconut flakes
1/4 c sunflower seeds, raw
3/4 c sesame seeds, raw or toasted
1 tsp flax (ground or whole)
1/2 TBSP help seeds (optional)
**chill in fridge til it firms up, then use hands and a spoon to roll into balls
**makes approx 1 dozen, depending on the size of your bites
**NOTE: these need to stay refrigerated or they fall apart. Eat em right out of the fridge and ENJOY!
